Every morning, we carefully select premium domestic duck from Kyoto, Aomori, Iwate, and other regions, and slowly simmer it with green onions and water. Please enjoy the natural richness and deep umami of our duck broth.

Our Commitment

We craft our signature sauce using carefully selected dark soy sauce, light soy sauce, and double-brewed soy sauce from regions such as Banshu Tatsuno, Chiba, and Aichi, blended with the umami of duck and green onions.

Premium duck sourced from across Japan—including Kyoto, Aomori, and Saitama—is used to prepare our duck broth.

Green onions, garlic chives, onions, and garlic—members of the allium family that pair exceptionally well with duck—are seasonally sourced from carefully selected regions throughout Japan.

Our duck broth is simmered using purified, high-quality water with impurities removed.

We use custom-made “Kamo to Negi” original noodles, specially blended with domestic whole wheat flour and premium wheat.
